তিল দিয়া কাৱৈ মাছ || Til diya kawoi maas
||Climbing Perch fish with sesame seeds|| Assamese cuisine
Ingredients

Climbing perch fish(kawoi)
Sesame seeds
Mustard Oil
Dry chilli
Bay leaves
Onion
Ginger
Garlic
Coriander powder
Cumin powder
Salt
Hot water
Green chilli

Method

Wash, clean and dry the fish.

Rub the fish with salt and turmeric powder and shallow-fry until half-cooked.

Roast 1/2 cup of black sesame seeds and 1 tbsp of peppercorns on low flame and grind into a paste with a little bit of water...keep aside

Heat oil ,put 2 dry chilli.and 1 bay leaf..saute..

Then add 2 medium sized onion paste,and two tbsp of ginger garlic paste..keep stirring until oil starts separating.

Add 1/2 tsp of turmeric powder ,1 tsp of coriander powder ,1 tsp of cumin powder..stir for few min...

Then add sesame paste, and a add 1.5 cup of hot water ...Stir to combine.

Season with salt and when the dish comes to a rolling boil, add parboiled fish, cover and simmer on a low flame until water reduces to one-fourths and the fish is completely cooked.

Note: The sesame seed sauce must stick to the fish.

Turn off the flame and drizzle some mustard oil over the dish

Garnish with green chilis, serve with rice, and enjoy!
