Ingredients:
½ cup steamed sweet potato
½ cup steamed carrot
½ cup steamed beetroot
100–150g tofu (lightly sautéed)
1 tbsp pomegranate
1 tsp pumpkin seeds
Anti inflammatory Dressing:
1 tsp olive oil
½ tsp grated ginger
A pinch grated fresh turmeric
1 tsp lemon juice
Salt to taste
Black pepper
Nutrition (approx)
Calories: 350 kcal
Protein: 22 g
Carbohydrates: 30 g
Fats: 12 g
Fiber: 9 g
Method:
Steam sweet potato & carrots until soft.
Lightly sauté tofu.
Mix everything in a bowl.
Add dressing, toss gently.
Finish with pomegranate & pumpkin seeds.
