Ingredients (Serves 2)
200 g cherry tomatoes, halved
200 g fresh mozzarella cheese
8–10 fresh basil leaves, chopped
½ avocado, cubed
1 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
Salt to taste
Method
1. In a large bowl, add halved cherry tomatoes.
2. Tear or cube the mozzarella and add it in.
3. Add avocado cubes gently (don’t mash).
4. Sprinkle fresh chopped basil.
5. Drizzle olive oil and balsamic vinegar.
6. Add salt to taste.
7. Toss gently and chill for 10–15 minutes before serving.

Protein: 16 g
Carbs: 12 g
Fiber: 5 g
Fat: 28 g
