Garden to Table: Roasted Radishes || Black Gumbo

Radishes can be peppery and too hot for many. In this episode, we learn how to tame the spice and make a sweet and savory side dish.

Here's the recipe:

Alysheba Roasted Radishes

Quantities are up to you:

A couple of cups of fresh Radishes, tap and greens removed, cleaned and scrubbed.
Olive oil to coat
A pinch or two of quality salt to taste
Fresh, minced garlic to taste
Thyme - a dusting of dried thyme or minced fresh thyme
Half to a whole a bell pepper, diced
Green onions, minced
Two or three shallots, sliced
Several sprigs of parsley, chopped.

Cut radishes in half, quarters if they are larger than a ping pong ball.
Mix all ingredients in a bowl to coat.
Roast on cookie sheet at 400, check at 20 minutes, then 40 minutes, until radishes are soft and carmelized. When they have a nice brown edge, or some of the shallots are burning, they are ready.
