Sicilian Ravazzate | Authentic Street Food from Sicily

Ingredients:
For the Dough:
750g 00 flour
6g dry yeast
75g sugar
355g water (room temperature)
75g lard or Crisco
15g salt
For the Ragù Filling:
2 lbs ground beef
1 lb ground pork
2 carrots, diced small
2 celery sticks, diced small
1 onion, diced small
3 bay leaves
1 cup red wine
1/2 can peas
2 cups water
300g tomato paste
2 tbsp sugar
Salt & pepper
Olive oil
For the Topping:
1 egg (for egg wash)
Sesame seeds
Instructions:
Step 1: Make the Dough
In a large bowl, mix flour, yeast, and sugar. Add water and stir until a dough forms.
Add lard and salt, then knead for 5-10 minutes until smooth and elastic.
Cover with plastic wrap and let rise in a warm spot for 2-3 hours until doubled in size.
Divide the dough into 2.5 oz balls, place them on a greased baking sheet, cover with a damp towel, and let rise for 1 hour.
Step 2: Make the Ragù
Heat olive oil in a pan over medium heat. Sauté carrots, celery, and onion until softened (about 5 minutes).
Add ground beef and pork, season with salt and pepper, and brown the meat.
Pour in red wine, stir, and let it evaporate.
Mix in tomato paste, cook briefly, then add water, sugar, peas, and bay leaves. Simmer for 15-20 minutes until thick.
Cool the ragù completely in the fridge before assembling.
Step 3: Assemble the Ravazzate
Flatten each dough ball into a disc (5-6 inches wide).
Add 2 tablespoons of ragù to the center, seal the edges tightly, and place seam-side down on a parchment-lined baking sheet.
Step 4: Bake
Preheat the oven to 350°F (180°C).
Brush each with egg wash, sprinkle sesame seeds on top, and bake for 25-30 minutes until golden brown.
