Lotus root soup with pork ribs and peanuts

I was brought up in a Cantonese family. Lotus root soup with pork ribs and peanuts (排骨花生莲藕汤) is the best soup I like among a variety of soup served by my mother.

Over the years, I have tasted the many variations of lotus root soup, but none of those can beat the time-tested family recipe. The flavor of pork ribs, peanuts and lotus roots are the triumvirate of the lotus soup. That is the ultimate combination! We keep it simple, no carrot, no sweetcorn required.
