Lip smacking Bottle Gourd/Lauki Biryani to Replace Chicken Biryani on your No Nonveg Days

Today, we're going to take you on a culinary journey with a twist. Introducing the Bottle Gourd Biryani Recipe, a symphony of flavors, textures, and nutrients that will leave you wanting more.
This Lauki Biryani recipe is a perfect blend of traditional Indian spices, tender bottle gourd, and aromatic basmati rice. Not only is it a treat for your taste buds, but it's also a nutritional powerhouse, packed with vitamins, minerals, and antioxidants.
To create this masterpiece, you'll need:
- 1 large bottle gourd, peeled and grated
2 medium sized onion chopped
- 1 cup plain yogurt
- 2 tbsp garlic paste / crushed
-1 1 tbsp garam Masala or (chicken masala)
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 2 tsp red chili powder
- Salt, to taste
- 2 tbsp olive oil
- 2 cups basmati rice
- 2 cups water
- 1 Bay leaf
- 3 clove
4 pepper corns
1 cinnamon
1 big cardamom
1 small cardamom
- 1/2 cup chopped fresh coriander
- 1/4 cup chopped fresh mint

*Instructions:*
1. In oil, Add bay leaf, cinnamon, cardamom,clove, Followed by onion, let it cook then add grated bottle gourd.
2. Add garlic, all spices and once cooked Add curd with water, let it cook
3. Now Add soaked Rice with Coriander and mint leaves, mix well, Cover and cook for 5 mins.
4. Open lid and Add water, cover and cook again for 7-10 mins till the rice gets cooked.
