How to Smoke a 15 lb. Prime Rib low and slow

Rinse your Prime Rib and pat dry
Trim the fat
Rub your Prime Rib with a base mustard to adhere your seasoning
Rub your Prime Rim with a stake seasoning of your choosing.
Wrap in foil and set in refrigerator over night
Remove from refrigerator and uncover foil wrapping.
Place Prime Rib on baking sheet. Let meat come down to room temperature
Preheat smoker to 225º f
Place Prime Rib in smoker for 8 hrs or until internal temperature reaches 145º f.
Remove from heat, cover with foil and let rest for 15 minutes.
Uncover, slice and serve.
