A big pizza crust rises in South London.
Born out of lockdown, Breadstall Pizza on Northcote Road in Battersea, South Londons mixes biga (a pre-ferment) into its dough to power the puffiest crust in London. But whereas as most crusts that resemble what the Italians call a canotto (inflatable raft) are soft and collapsible, Breadstall maintains a crisp edge by twice-baking its pizza slices. One removed from the oven, the pizzas are cut into fourths and then, once each slice has been ordered, then finished off in a smaller oven for a little drying and crisping.
