Let's Make Pizza Toast with Tim Anderson
For the Home Edition of the London Pizza Festival, celebrity chef Tim Anderson of London's Nanban provides an A-to-Z of Japanese-style pizza toast. Yes, pizza toast, once a standby of Japanese coffeehouses known as "kissaten".
In his home kitchen in Brixton, Tim demos two variations:
1) An homage to the deconstructed Margherita of pizza great Franco Pepe designed to resemble an Italo-Japanese flag.
2) A classic pizza toast with the kanji character representing "nostalgia" carved in strokes of roasted orange pepper.
"Pizza toast isn't real pizza," says Tim, "but it's real good."
