Delicious Seared Scallops
Today we are teaching you how to make a DELICIOUS SEARED SCALLOPS! They are amazing!!!

Ingredients:
1 to 1 1/4 pounds dry sea scallops, approximately 16
2 teaspoons unsalted butter
2 teaspoons canola oil
Kosher salt
Freshly ground black pepper
Directions:
Remove the small side muscle from the scallops, if necessary, and thoroughly pat dry with a paper towel.
Add the butter and oil to a 12 to 14-inch saute pan on high heat.
Add salt and pepper to the scallops, on both sides.
Once the bubbles from the butter subside and the fat begins to smoke, gently add the scallops, making sure they are not touching each other. (If the pan was a clock, you can start at 12 o'clock and place the next one at 1 o'clock and so on)
Sear the scallops for 1 1/2 minutes on the first side. DON NOT TOUCH THEM until is time to turn them.
After 90 seconds, start turning them, beginning at 12 o'clock, the 1, Alcock and so on.
Sear for another minute.
The scallops should have a 1/4-inch golden crust on each side while still being translucent in the center.
Serve immediately.
