Bry's cooking_Ondeh Ondeh cake
Ondeh Ondeh cake recipe:
Ingredients:
Cake (batter):
1) 3 tbsp corn oil
2) 4 tbsp pandan juice
3) 60g plain flour
4) 15g caster sugar
5) 15g corn starch
6) 3 egg yolks
7) 20g coconut cream
Cake(meringue):
1) 3 egg whites
2) 50g caster sugar
Coconut fillings (white):
1) 140g grated coconut
2) 1/4 tsp salt
3) one pandan leaf
Coconut fillings (with palm sugar):
1) 80g palm sugar( gula melaka), chopped
2) 3 tbsp water
3) One pandan leaf
4) 140g grated coconut
Palm sugar (gula melaka) syrup :
1) 80g palm sugar(gula melaka), chopped
2) 3 tbsp water
3) one pandan leaf, knotted
4) 2 tbsp coconut milk
5) 2 tsp corn starch
6) 1 tbsp water
Steps:
1) Preheat oven to 145c
2) Mix corn oil, plain flour, pandan juice, caster sugar, corn starch, coconut cream and egg yolks. Set batter aside.
3) Prepare meringue. Using an electric mixer, whisk egg whites in a clean, dry mixing bowl until foamy. Gradually add sugar while whisking until soft peak.
4) Slowly fold half the meringue into batter, then fold in remaining half once incorporated.
5) Pour batter into baking pans. Bake for 50 mins.
6) Remove the cake from oven. Flip over immediately. and leave it to cool.
7) Fry grated coconut, pandan leave till slight dried. add slat to taste. Remove the pandan leave and leave it to cool.
8) Simmer chopped gula melaka (palm sugar), salt, water, grated coconut and pandan leaves for 15 mins. Heat the mixture to boil. Remove pandan leave. Set aside to cool.
9) Mix gula melaka (palm sugar), water, pandan leave( knotted), coconut milk and cook in low heat for 20 mins. mix corn starch and water and pour into the gula melaka syrup. Stir and strain. Leave it to cool.
10) In a clean mixing bowl, whisk fresh cream to soft peaks. Add gula melaka syrup (optional) over ice water. Set aside.
11) To assemble cake, place a layer of cake on a tray. spread with some fresh cream. Sprinkle with grated coconut and drizzle with palm sugar syrup( optional). Repeat for another 2 layers.
Top with a final layer of cake, then cover whole cake with fresh cream. Coat with grated coconut.
