炒米粉 Fried Rice Noodles

材料:
米粉 120克
肉絲 50克
紅蔥頭 20克
胡蘿蔔絲 40克
高麗菜絲 100克
香菇絲 20克

Ingredients:
120 grams rice flour
50 grams pork
20 grams shallots
40 grams carrots
100 grams shredded cabbage
20 grams Mushrooms

調味料:
高湯 150CC
醬油 1大匙
鹽 1/4茶匙
白胡椒粉 1/6茶匙

Seasoning:
Clear soup stock 150CC
1 tablespoon soy sauce
1/4 teaspoon salt
1/6 teaspoon white pepper

作法:
1.米粉以開水泡約1分鐘後撈起;紅蔥頭切碎。
2.熱鍋倒入少許油,下紅蔥頭炒香後加入肉絲、香菇絲炒散。
3.下高麗菜、胡蘿蔔絲所有調味料煮開。
4.加入米粉入鍋中拌炒均勻後關火蓋上鍋蓋,燜約3分鐘至湯汁被米粉吸乾,拌勻即可。

Preparation Instructions:
1. Boil the rice noodles in water for about 1 minute until they puff up; chop up the shallots.
2. Pour a little oil into a wok. Next, stir-fry the shallots. When the aroma comes out, add the pork and mushrooms and stir-fry.
3. Next add the shredded cabbage, carrots, all seasonings, and bring to a boil.
4. Add the rice noodles into the wok and stir in evenly. Turn off the heat, cover the wok, and let it simmer for about 3 minutes until the sauce is dried up by the rice noodles. Finally, mix it well.
