🇻🇨St Vincent Doughboy/Coconut Bake

Growing up with my grandmother she always used to make this delicious doughboy on the coal pot outside in the yard and she sometimes wrap with banana leaves. We eat it with salt fish, stew and curry meat, corn beef and much more.
Remember foods containing fats such as breads, doughboy, become rancid quickly if they are not stored properly.
Recipe
2 cups of all purpose flour and 1 extra cup to help knead it in.
1 cup of grated coconut
1 teaspoon yeast plus 2 teaspoon of brown sugar in 1/2 cup of warm water. Leave to activate for 5 minutes or until it activate.
3 tablespoons butter
1 teaspoon nutmeg
1/2 teaspoon salt
After you pour in yeast mixture, don't add too much water. the coconut is moist and I add 1/2 cup of water to the yeast and sugar mixture.
Add more sugar to the flour if your prefer it sweet about 1-2 tablespoon.
Bake on greased baking pan at 350 degrees for 40 minutes
