🌸Honey & Coconut Caramelized Chicken

Ingredients

For the Marinade
1 Tbsp sugar
1 tsp salt
1 1/2 Tbsp fish sauce
5 green onions, white part only, finely chopped
1 to 3 red chili, finely chopped (I used Thai chilies)
5 garlic cloves, finely chopped
1 1/2 Tbsp sesame oil
4 bone-in, skin-on chicken thighs

For Cooking
2 Tbsp vegetable oil
1 large onion, sliced into 1-inch thick pieces
1 1/2 cup 100% coconut water, strain any pulp
1 1/2 Tbsp honey
Fish sauce to serve
