Recipe: (Makes 40+/- Cabbage Rolls)

10 Pounds of Large Head Green Cabbage
2 pounds of ground beef
2 pounds of ground pork
60 ounces (3.75 pounds) Tomato Sauce (separated)
60 ounces (3.75 pounds) of crushed tomatoes w/ juice
1 pound of diced onion
8 garlic cloves minced
2 cups parboiled rice
1/4 cup dried parsley
4 teaspoons salt
2 teaspoons pepper
1 Tablespoon Dried Dill Weed
1/2 tsp cayenne pepper
4 eggs

(This is for the topping)
2 teaspoons of sugar (for sauce that goes on top of cabbage rolls)
1.5 Quarts of chicken stock

Core cabbage heads and blanch them in slightly salted water for 5 minutes. Set aside to cool. Reserve about 1.5 quarts of the cabbage water and to that add 6 bouillon cubes. Set aside. Peel the outer layers of the cabbage off and place in piles according to their size. You want to use the biggest and prettiest for your rolls. With a pairing gently slice the thick vein off of the cabbage (Watch Video). If the cabbage gets too small set it to the side and grab another head. Once all that is done prepare your meat mixture. In a large bowl combine the pork, beef, 2 cups of tomato sauce, onions, garlic, seasonings, rice, and eggs. Mix well to combine.

*** A Very common method of preparation to is precook the rice with some chicken stock and add cooked rice to your meat mixture*** This will ensure that your rice comes out tender after it bakes and also reduces the baking time by 30 minutes!!
You should have remaining tomato sauce. Combine the crushed tomatoes to the tomaot sauce and add the sugar. Stir.

Assemble:
Scoop out 1/4 cup of meat mixture into your cabbage leaf closest to the vein that was sliced. Roll the cabbage up tucking in the sides and creating a little parcel. Place these rolls into a baking dish that has some of the tomato sauce spread over the bottom. Once the baking tin is completely full spread 2-3 cups of tomato sauce over the top along with 2-3 cups of chicken stock. Using the cabbage leaves that were too small or the heads that you set aside completely cover the top of you rolls then cover with foil and bake in a preheated oven 350F for 90 minutes or until your internal temperature reaches 155-160F

After they cook enjoy for dinner then let the rest cool down completely (we refrigerate ours and process the next day). Combine the remaining chicken stock with tomato sauce (if you have any left) and as you package these up in freezer safe bags add about 1/4 cup of sauce per 4 rolls)

To reheat just take them out, let them thaw, and bake covered for 30 minutes at 350F. If you are using bags like I have then you can simply boil them for 20 minutes and enjoy. Add a dollop of sour cream and you are in Gołąbki heaven!!
