Chocolate Fudge Cake
1 1/4 cups (2 1/2 sticks / 10 oz / 285 g) butter
1 2/3 cups (13 1/3 fl. oz / 395 ml) water
5 eggs, room temperature
7/8 cup (3/4 cup + 2 tablespoons / 7 oz / 198 g) sour cream, room temperature
1 tablespoon vanilla extract
3 1/3 cups (14 1/8 oz / 400 g) all-purpose flour
2 1/2 cups (1 lb. 1 1/2 oz / 496 g) sugar
7/8 cup (3/4 cup + 2 tablespoons / 7 oz / 198 g) dark brown sugar
1 1/4 cups (3 3/4 oz / 106 g) dutch processed or special dark cocoa powder
2 1/2 teaspoons baking soda
1 5/8 teaspoons (1 1/2 + 1/8 teaspoon) baking powder
1 5/8 teaspoons (1 1/2 + 1/8 teaspoon) salt

My best ever vanilla buttercream frosting (with peppermint extract) 1 1/2x recipe
1 1/2 cups + 3 tablespoons (3 sticks + 3 tablespoons / 13 1/2 oz / 383 g) butter, softened
9 cups (2 lb. 6 1/4 oz / 1,085 g) powdered sugar
6 - 10 tablespoons heavy cream or milk or water
1 tablespoon peppermint extract
1/8 teaspoon salt

Chocolate Ganache
4 ounces (113 g) chocolate, any kind you like, chopped
1/2 cup (4 fl. oz / 118 ml) hot heavy cream

30 peppermints, crushed
