Bánh Mì Việt Nam Bột Chua Đa Dụng - No Knead Sourdough Ear Breads
Cách làm này không xài men nổi thương mại, tự làm bột chua để làm nổi bánh. Không nhồi bằng máy. Không phải autolyse hoặc polish. Chỉ trộn tất cả nguyên liệu rồi cho lên men. Bánh nở có cánh, vỏ giòn, ruột nở.

Bột mì đa dụng -500g All purpose flour 11.7% protein
Bột chua -100g sourdough starter
Muối - 8g sea salt

Direction notes:
1/ Mix all ingredients in a big bowl: Flours, sourdough starter, water, salt, mix until well combined.
2/ Stretch and fold until smooth, elastic
3/Let the dough rise in IP yogurt, Less for 3 hours total, stretch and fold after one hour.
4/ Stretch and fold. Pre-shape the dough. Cover and rest for 20-40'
5/Shape. Place the loaves onto the baguette pan, seal side down. Cover and rest for 3 hrs or pass the finger poke test, indentation spring back very slowly.
6/ Preheat the oven to 450°F. Place rack at lower middle position of the oven
7/ When the oven's heat reaches to 400°F, split the bread and spray water
8/ Place the pan into the oven, spray water and bake 7' then spray water. Bake 17' or until golden brown.
