Chawal ki kheer | Rice kheer | Authentic Hyderabadi chawal ki kheer:
Ingredients:
• Milk - 2 Liters
• Rice - 1 Cup
• Almonds - 15-20 pcs
• Cashews - 8-10 (For Garnishing)
• Pista - 10-15 (For Garnishing)
• Khowa - 100 - 150 Grams
• Sugar - 1 Cup ( 200-250Grams )
• Chandi ka Waraq - For Garnishing
• Elaichi powder - 2 tea spoon
Procedure:
• Wash the rice and almonds and soak it for almost 30 mins - 1 hour, as shown in video.
• Once the almonds are soaked, peel the cover of it as shown in video.
• Now drain all the water from rice and almond’s and transfer it to a mixer jar and add little water and grind it into coarse paste (not fine) as shown in video and keep it aside.
• Now take a vessel and add milk to it and cook it on medium flame, until it takes boil and mix on regular intervals.
• Once the milk is boiled add the paste of rice and almonds, as shown in video.
• Now cook this on medium flame by mixing it on regular intervals until the rice paste gets tender.
• Now add sugar to it and mix it regularly until the sugar dissolves in it.
• Once the sugar dissolves, now add elaichi powder and khowa and cook it on medium flame until it dissolves by mixing it on regular intervals.
• Once the Khowa dissolves, add chopped dry fruits (almonds, pista, cashew) and mix it properly and once it takes a boil, close the flame and leave it to cool down.
• Once the Kheer is completely cooled, garnish it with chandi ka waraq, grated almonds and pista.
• That’s it friends Chawal ki Kheer is ready. Refrigerate it and serve it cool.
