Hyderabadi Mutton Marag Recipe | Mutton Marag banane ka tarika | #khanaezaiqa:
Ingredients:
• Mutton (Gosh) – 500 Grams (With Bones)
• Ghee - 3-4 table spoon
• Pyaz (Onions) - 2 Medium Size (sliced)
• Adrak- Laison (Ginger Garlic) Paste - 2 Table spoon
• Kaju (Cashew) - 12-15 pcs
• Badam (Almonds) - 12-15 pcs
• Haldi (Turmeric) Powder - 1 Tsp
• Namak (Salt) - 2 Tsp (According to Taste)
• Garam Masala Powder - 2 Tsp
• Kali Mirchi (Black Chili) Powder - 2 Tsp
• Loung (Clove) - 4-5 No’s
• Kali Mirchi (Black pepper) seeds - 10-12 No’s
• Elaichi (Cardamom) - 4-5 No’s
• Big Elaichi - 2 No’s
• Chakri Phool - 2 No’s
• Kabab chini - 4-5 No’s
• Shah Zeera (Caraway seeds) - 1 Tsp
• Tej Patta (Bay Leaves) - 2 no’s
• Dal Chini (Cinnamon Stick) - 2 inch
• Pani (Water) - 1 liter (As per required consistency of soup)
• Hari Mirchi (Green Chilies) - 8 to 10 Pcs (paste)
• Dhaniya/kotmir (Coriander Leaves) - (1/4) bunch
• Pudina (mint leaves) - (1/4) bunch

Procedure:
o Wash the mutton thoroughly and keep aside.
o In a Pressure Cooker add ghee and warm it
o When ghee becomes hot, add onions and saute till it becomes soft (not golden brown).
o Now add the whole spices and saute it for 10 sec.
o Now add Mutton, ginger garlic paste, and green chili paste and mix it well.
o Now add turmeric powder, Kali mirchi powder and salt and mix it well and saute it.
o Now and add water till the mutton completely gets merged in it.
o Now cook it on medium flame until it takes boil.
o Now close the pressure cooker lid and keep it on medium flame to take 05-06 whistles or until mutton gets tender.
o Now we will prepare the Almond and Kaju paste:
o Soak the almond and kaju in water for almost 1 hour.
o Now peel off the cover of Almond as shown in video.
o Now drain all the water of Cashew and Almonds and transfer them in a mixer jar.
o Now add little milk and grind it to make the paste and keep aside.

o Now open the pressure cooker lid (when its pressure is all gone). And mix it well.
o Now add the Cashew & almonds paste and mix it well. And cook it on medium flame till it takes one boil.
o Once it takes boil, add sufficient amount of water based on your requirement for the consistency of marag soup.
o Now add chopped coriander leaves, mint leaves, lemon juice, garam masala powder and mix it properly and leave to cook until it takes boil.
o Once it takes boil, now add ghee in it and let it boil on medium flame and close the flame after boil and leave it for 5-10 mins, so that ghee comes above.
o That’s it friends Mutton Marag is ready to dish out.
o Serve it with Naan (Bread).
