Hansik of The Day(Ep.9) Soybean-harvesting day : Soybean _ Full Episode
Long ago, when winter came, cheongguk-jang (rich soybean paste) would be aging in a corner of the house, meju (fermented soybean blocks) would hang from the ceilings, and boiled soybeans would come to the table as tofu.
Meju, cheongguk-jang and tofu were all made from the same ingredient, the small and humble soybean. Soybean harvesting day has always been an important day for Koreans, because the beans were what would keep them warm throughout the winter.
Bean sprouts would fill hungry stomachs of ordinary Koreans, and be served to nobility as yeonpo-tang. For the people of Jeju, bean powder made with raw soybeans was a crucial food ingredient.
On this episode, we learn about the history and significance of soybeans in Korean food and Korean life.
콩 수확하는 날
그 옛날 겨울이 찾아오면
안방 아랫목에선 청국장이 익어가고,
건넌방에선 메주가 곰팡이 옷을 갈아입으며,
솥에 끓인 비지는 보드라운 두부로 태어나 밥상에 올랐다.
메주도 청국장도 두부도 그 시작은 손톱만한 곡물 콩이었다.
그래서 한국인의 추운 겨울을 따뜻해줄 데워줄 콩을 수확하는 날은
더욱 특별한 날일 수 밖에 없었다.
그렇게 수확한 콩은 콩나물이 되어 서민들의 굶주린 배를 채워줬고,
연포탕이 되어 양반들의 은밀한 잔치에 소환되기도 했다.
특히 날콩가루는 제주사람들에게 있어 빼놓을 수 없는 식재료였다.
콩 수확하는 날을 통해 우리의 식문화를 지탱해온 콩의
