Carbonara | How to make classic carbonara | 까르보나라
Part 4 of four classic roman pasta dish. Pasta, pecorino cheese, black pepper, guanciale, and eggs. Iconic pasta dish that is creamy, salty and delicious! Original recipe calls for absolutely no cream. Pasta water is used to make a creamy emulsion. A continuation from cacio e pepe: adding guanciale to give you gricia! Adding eggs to gricia to give you carbonara!

Ingredients for 2 serving:
-Spaghetti (200g)
-Black pepper (to taste)
-Pecorino Romano (50g or 1/2 cup)
-Guanciale (75g)
-4 Egg yolks

Method:
-Boil pasta water, seasoning lightly because pecorino and guanciale are salty
-Cook the pasta for 2 minutes less than package instructions
-Mix 4 egg yolks with finely grated pecorino
-Add pasta water and mix with egg, pecorino mixture to prevent scrambling
-Render out guanciale over medium heat
-Once crispy set aside guanciale
-Add pasta water to the guanciale oil and pasta as well; TURN OFF HEAT
-Add yolk and pecorino mixture and stir well
-More pasta water can be added if too thick
-Fold in crispy guanciale and black pepper to taste
