Pasta alla gricia | 파스타 알라 그리치아
Part 2 of four classic roman pasta dish. Pasta, pecorino cheese, black pepper, and guanciale. If you cannot find guanciale you may use pancetta!
A continuation from cacio e pepe: adding guanciale to give you gricia! Pasta alla gricia is the predecessor to amatriciana and carbonara. Stay tuned for next episode with bucatini all'amatriciana.

Ingredients for 1 serving:
-Rigattoni (150g)
-Black pepper (to taste)
-Pecorino Romano (50g or 1/2 cup)
-Guanciale (75g)

Method:
-Boil pasta water, seasoning lightly because pecorino and guanciale are salty
-Cook the pasta for 2 minutes less than package instructions
-Render out guanciale fat without adding any other oil.
-Once crispy set aside guanciale
-Add black pepper to the oil and also add pasta water and pasta
-Stir to emulsify
-Add pecorino little by little while stirring to prevent clumping
