Nā kóng tio̍h bah-lō͘ ê chia̍h-mi̍h, ē-káng ê khòng-bah-pn̄g sī góa 1-sì-lâng ê giàn, hông thāu--tio̍h, bê-loân ê giàn. Kiâⁿ ji̍p-khì tiàm--ni̍h, nā chai thang hoan-hù thâu-ke kā lí khoán pûi--ê, pah-bīn sī tòa kāng 1-tiâu hāng-á-lāi ê chhù-piⁿ. Sam-chân-bah óa phôe ê pō͘-hūn oán-jiân sī chhiⁿ-chhioh nńg-loán ê siàu-lú. M̄-koh, tiŏng ê jī-nn̂g chiah sī chit-chhut-hì ê lú-tòaⁿ. Braised pork. Southern slow-cooked pork belly over rice, it's the love of my life. My poison of choice. My one addiction. If you see someone walk in and ask the cook for an extra fatty piece, you know they must be a local. Pork belly, the bit just next to the skin is oh-so-soft and tender. But the fat through the middle is like a diva; the real star of the show. Dropping a scoop of freshly cooked rice into the bowl, it steams as if to welcome her out onto the stage. Savory aromas waft up from her strips of silky, glistening white, truly, a sight to behold. You quickly bring up a heaping spoonful of rice and it kisses your tongue. The fragrance fills your mouth, melting in between your teeth, dancing. Ah... your spirit soars to the Heavens with joy. You sober up as you see the bottom of the empty bowl. Is it time yet for seconds?
