Panang curry paste (Vegan)

Ingredients
Whole spices
▢1 tablespoon coriander seeds
▢1 tablespoon cumin seeds
▢½ tablespoon black peppercorn
▢5 cardamom pods use only seeds
Fresh Herbs
▢2 stems – Lemongrass Finely chopped – around ¾ cup
▢2 shallots Finely chopped around 3 tbsp
▢7 garlic cloves finely chopped (Around 1 ½ tbsp)
▢1 cm. galangal finely chopped (around 1 tbsp)
▢5 kaffir lime leaves finely chopped
▢1 fresh thai red chili
▢4 tablespoon finely chopped cilantro stems
Other ingredients
▢3 tablespoon roasted peanuts
▢5 red dried chilies I have used guajillo chilies
▢1 teaspoon salt
