WHAT MY KIDS EAT IN A DAY - Day 22

This day was definitely one of those clean out your fridge and freezer day.

Breakfast: Strawberry Oatmeal
Ingredients:
1 cup strawberries, chopped
1 tablespoon honey (more to taste)
1 teaspoon vanilla extract, optional
2 cups milk
1 cup old-fashioned rolled oatmeal
Fresh strawberries, for garnish

Directions:
In a pot, combine the strawberries, honey and vanilla. Cook for about 5-7 minutes on medium heat until the strawberries have softened. Add the milk and once it begins to bubble, add the oatmeal. Cook for about 7-10 minutes until thickened and top with fresh strawberries.

Smoothie:
I was trying to clean out my freezer and use whatever fruits I could find. So, I thought it would be fun to make 2 different smoothies. The measurement is just an estimate, I pretty much just emptied out open bags with whatever fruits that was left.

Pink smoothie: 2 packs frozen dragon fruits and 1 frozen banana. Add about 2 tablespoons of milk and blend. You might have to stop, scrape the sides and blend again until smooth. Remove contents into a bowl and rinse the blender.

Yellow smoothie: 1 cup frozen mangoes, 1 cup frozen cauliflower and ½ cup frozen pineapple. Blend and repeat the process as the pink smoothie.

Place in cups alternating between the two smoothies. This is a thicker consistency than a regular smoothie, serve with a spoon.

Lunch: Beef Nachos
Ingredients:
1 lb ground beef
1 small onion, diced
6 cloves garlic, minced
2 tablespoons tomato paste
Seasoning: 1 teaspoon each salt, garlic powder, onion powder, cumin, smoked paprika, chili powder, dried oregano. ½ teaspoon black peppers and a pinch of cayenne pepper (optional). Mix together.
1 cup beef broth (water is fine)
1 cup cheese (I used Mexican blend, Monterey and a bit of mozzarella)

Refried Beans:
1 can pinto beans
Some chopped onion and garlic
Seasoning: salt, cumin, chili powder, pepper

For the nachos:
Tortilla chips, chopped onion, tomatoes, avocados and sour cream (and whatever else you like)

Directions:
Cook the ground beef until browned, breaking it up as you go. Drain the fat. Add the onion and garlic, cook for about 4 minutes. Add the tomato paste and seasonings, cook for about a minute then add the beef broth. Let this simmer for about 10 minutes, add more broth/water if it gets too dry.

In the mean time, add some oil into a pot and cook the onion and garlic for a few minutes. Add the pinto beans, this is the only time that I don’t drain the juice. Mash it with a fork until smooth. Add the seasoning and season to taste, remove from heat.

To assemble the nachos: in a baking sheet (or pizza pan) lay your chips, then add the meat, refried beans and top with cheese. Bake in the oven at 400F until cheese has melted 5-7 minutes. Top with chopped onion, tomatoes, avocado and sour cream.

I stuck to the original recipe, no modifications. This is a great recipe as it is.

Dessert: Pretzel Rods Dipped Chocolate.
Ingredients:
12 Pretzel rods
1 cup chocolate chips
1 cup white chocolate chips

Directions:
Place the chocolate and white chocolate chips in separate (microwave friendly) cups. Heat each one separately in the microwave in 30 seconds intervals. Stir to make sure they have melted completely. Dip 6 pretzel rods into the chocolate and the other 6 into the white chocolate chips. Use a spoon to coat the pretzels if necessary. Place on a parchment lined baking sheet and refrigerate for about 15 minutes. After 15 minutes, use a fork to drizzle the leftover chocolates on top of the rods (you may need to reheat the chocolate again). Store in the fridge until ready to eat.
