Easy Weeknight Jambalaya | No Expert with Emily Duncan

Hey gang! Today, we're making one of my absolute favorite weeknight dinner recipes: my take on jambalaya.

...just with my own twists to make it a little faster and a little easier/cheaper to shop for (at least in my area).

Quick aside before we get to the recipe: I'm posting this on Canada Day (July 1st). Ok, recipe!

Ingredients:
- 1 Tbsp butter
- 4 andouille sausages, sliced into 1/2 inch coins
- 16 frozen shrimp, thawed, peeled & halved
- 1 green bell pepper, chopped
- 1/2 yellow or Spanish onion, chopped
- 3 cloves garlic
- 1/2 tsp cayenne
- 2 bay leaves
- 1/2 tsp thyme
- 1 1/2 tsp salt
- 1-2 tsp black pepper (to taste)
- 1 can diced tomatoes
- 1 1/2 cups jasmine or long grain rice
- 2 1/2 cups chicken stock

1. In a big pot, melt butter over medium-medium high
2. Brown the sausage in the pot, about 5 minutes
3. Add the shrimp, cook 1-2 minutes
4. Add 1/2 the green pepper, 1/2 the onion, and your spices. Cook until veggies start to soften, about 5 more minutes
5. Add the garlic, cook 2 more minutes
6. Add the can of tomatoes and the remaining onion and pepper, give it a stir.
7. Add the rice and stock.
8. Bring to a boil, cover, and reduce heat. Simmer on low at least until rice is cooked, but up to 45 minutes (the longer the better!). I recommend taking a little break to watch TV or make a cocktail. Stir once around the 25 minute mark, to make sure you don't need to adjust the temp.
9. Scoop into a bowl and enjoy!
