Summer Dish With Mix Vegetables. Healthy and Delicious!

Hello everyone,

This is a delicious, healthy and so appetizing dish. I called a summer dish because the summer is coming and the veggies taste better in summer since is their season( but why not to try in all seasons).

Ingredients :
-2-3 eggplants
-5-bell peppers(or whatever peppers you have)
-3-4 zucchini,summer squash.

Sauce ingredients:

-Half cup olive oil
-Half cup of balsamic vinegar ( if you don’t have it you can use apple cider vinegar or white or red vinegar, but use 2 teaspoons only of them not a half of the cup)
-One table spoon salt
-One teaspoon of sugar
-One teaspoon of crushed peppers.
Mix well

Wash the veggies throughout, dry and start making them ready to be cooked.

Take a pan, put baking papers on it(to reduce the time of washing it afterwards) and lay the bell peppers there. Bake until soften and their skin start turning brown. Keep on eye on them.
When cooked, remove from oven, let it cool.
Remove the skin of peppers and cut them with knife or hands.

Meanwhile cut the zucchini and eggplants and start cooking them in frying pans. For Zucchini I used a non stick pan and just a little olive oil.For the eggplants a regular pan with one cup of oil for all. Cook them until soft and slightly brownish. Remove from the pans and put in a plate with towel paper on it to get the extra oil.

When all cooked put them in a bowl and mix with the sauce prepared while cooking.

Let it rest outside if you going to eat soon or in the fridge for up to two days.
