Craving something cheesy, comforting, and full of flavor? Try these Cheesy Veg Enchiladas – made with a spicy homemade sauce, loaded veggie filling, and lots of melty cheese!

This quick and easy recipe is perfect for lunch, dinner, or even weekend meal prep. With vibrant veggies, beans, corn, and spinach rolled in soft tortillas, then baked to perfection, this dish is a total crowd-pleaser!

Ingredients:
For Enchilada Sauce:
* 2-3 ripe tomatoes
* 2-3 soaked red chilies
* 1 tbsp oil
* 2 tbsp maida (all-purpose flour)
* 1 tsp red chili powder
* 1 tsp garlic powder
* 1 tsp oregano
* 2 tbsp tomato ketchup
* 1 cup water
* Salt to taste
* 1 tsp lemon juice
* A pinch of sugar
For Filling:
* 1 cup chopped onions
* 3–4 garlic cloves, minced
* 1 cup chopped bell peppers
* 1 tsp cumin powder
* 1 cup spinach, chopped
* 1/2 cup boiled beans
* 1/2 cup boiled sweet corn
* Salt & black pepper to taste
* 1/2 cup enchilada sauce (from above)
* 1 cup grated cheese
Others:
* 3-4 tortillas

Method:
1. Prepare Enchilada Sauce:Boil tomatoes and blend with soaked red chilies to a smooth purée.Heat oil, add maida and cook until light golden. Add red chili powder, garlic powder, and oregano.Mix in tomato purée and ketchup. Add water and simmer. Season with salt, lemon juice, and a pinch of sugar. Set aside.
2. Prepare Filling:Heat oil, sauté onions until soft. Add garlic, then bell peppers and cook well.Add cumin powder and spinach, cook until spinach wilts. Transfer to a bowl.Add boiled beans, sweet corn, salt, black pepper, some enchilada sauce, and grated cheese. Mix well.
3. Assemble Enchiladas:Spread some enchilada sauce on each tortilla, add filling, and roll tightly.In a baking tray, spread enchilada sauce. Place rolled tortillas on top.Add leftover filling over the tortillas, then pour more enchilada sauce over everything.Sprinkle grated cheese on top.
4. Bake:Bake at 350°F (180°C) for 20–25 minutes until cheese melts and top turns golden.
