How to Make Leiden Cheese (aka Layden, Cumin Cheese, or Komijnekass)

Leiden is a town in the Netherlands from which this unique cheese gets its name. The addition of cumin seeds gives the cheese a distinctive dry, tangy and spicy flavour, very unlike of other Dutch cheeses.

The cheese making process is very similar to Gouda and can be made with skimmed milk in lieu of whole milk that I used in this instance. However, expect a lower yield if using skimmed milk!
