Lomo Saltado with roasted fingerling potatoes

Potatoes and spices that later were influenced by the arrival of the Spanish conquerors and different migrations such as Chinese, European, Indian, and Japanese immigrants (mainly throughout the 19th century) is the pride of modern Peru.

Peruvian cuisine may seem different at first, but combining flavors from multiple continents is the future.

• 1 lb sirloin, thinly sliced into 2-inch-long strips
• Kosher salt
• Freshly ground black pepper
• 1 tsp garlic, pressed
• ½ medium red onion, sliced thin
