Vietnamese Steamed Rice Cake |Banh Bo Hap|
Vietnamese Steamed Rice Cake
Ingredients
Proof yeast
2 tbsp warm water
2 gr yeast
1 tsp sugar
—combine yeast, sugar, water, mix well, cover with plastic wraps, rest until ready to add to batter.
Coconut Solution
4 tbsp water (remove 4 tbsp from the cup, save the rest to add to the flour to make the batter)
1/2 cup coconut cream
1 cup powdered sugar
3 tbsp powdered sugar
1/2 tsp salt
—combine water (4 tbsp), coconut cream, salt, powdered sugar, mix well on high heat until warm to the touch and not any hotter than that. Set aside until ready to add to batter.
Batter
Rice flour - 200 gr 2 cup pour then level
Tapioca - 20 gr 2 tbsp pour then level
Water - 240 ml (1 cup - remove 4 tbsp add to coconut milk mixture, the rest goes into the batter)
Baking powder - 4 gr 1 tsp
—combine rice flour, tapioca starch, water, and yeast, stir x 30 sec, then increase to speed #2 and mix for 10 minutes. Now scrape down the sides, add coconut solution, mix c 30 secs.
Now add finished batter to a container with lid. Close it tightly and rest for 3 hours.
Oil the molds well, add to a well heated steamer, add batter after molds have been warmed for 3 minutes.
Add batter all the way to the top leaving about 2 cm.
Steam for 9-11 minutes.
Remove lid every 3 minutes and wipe off steam.
Using a toothpick to check if done. Stick the toothpick through the middle and it no visible uncooked batter present, it’s done.
Coconut cream drizzle
1 cup coconut
1/4 tsp salt
2 tbsp sugar
Thickening agent
-1.5 tsp tapioca mix with
-2 tsp water
—combine coconut cream, salt, sugar, and thickening agent. Mix on high heat. Remove from heat as soon as you see track marks from whisking. Rest until cool before serving.
