Recipe:
Holiday Cookies Recipe
2 ½ cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract
Red gel food coloring
Green gel food coloring
2” and 1 ½” square cookie cutter
Small candies of choice to fill cookies
Directions:
1. Whisk together flour, baking soda, and salt in a medium bowl. Set aside.
2. Cream together the butter and sugar until light and fluffy. Add the egg and vanilla and combine.
3. With the mixer on low speed, slowly add the dry ingredients until just combined. Divide dough between two bowls. Color one bowl red with ¼ tsp red food coloring, and the other green with ¼ tsp green food coloring. Wrap dough in plastic wrap and refrigerate for 2 hours or freeze for 1 hour.
4. Preheat oven to 350F.
5. Working with one dough color at a time, roll out dough until ¼” thick on floured work surface. Use 2” cookie cutter to cut out 8 cookies, and place on parchment paper lined baking sheet. These will be the cookie tops and bottoms.
6. Re-roll scrap dough until ½” thick and cut out 8 more cookies with 2” cookie cutter. Then cut out center of each cookie with 1 ½” cookie cutter so you have a square ring. These will be the middle layers for the cookies.
7. Repeat steps 4-5 with other cookie color, and bake cookies for 8-10 min. Let cool completely before assembly
Cookie Icing Recipe
