Macaron Recipe

Ingredients:
120g almond flour
200g powdered sugar
3 egg whites
1⁄4 tsp cream of tartar
50g granulated sugar
Yellow gel food coloring

Directions:
1. Pulse together powdered sugar and almond flour in a food processor, then sift into a large
bowl. Set aside.
3. Beat egg whites until foamy, then add in cream of tartar and mix. Gradually add in granulated
sugar and beat for 8-10 minutes until stiff peaks form.
4. Fold egg white mixture into dry ingredients until mixture flows like magma (a streak of batter
scooped over the surface should disappear after about 30 seconds).
5. Place batter into a pastry or Ziploc bag and pipe out 1-1 1⁄2" macaron shells onto a silicone
mat or parchment paper lined baking sheet. Bang sheet onto counter a few times to release air
bubbles, and let macarons sit out on counter for 20-30 min (or up to an hour). Shells should be
dry to touch.
6. Bake at 300F for 20-25 minutes until macarons come off of baking sheet cleanly.

Buttercream Icing Recipe

Ingredients:
3 cups powdered sugar
1 cup (2 sticks) softened butter
1 tsp vanilla extract
1-2 T milk

Directions:
Cream butter with handheld mixer until smooth. Add in powdered sugar and combine. Mix in
vanilla extract, then add enough milk to reach desired consistency

Royal Icing Recipe
(note: contains raw egg whites. If you are sensitive to raw eggs, use alternate recipe with
meringue powder)

Ingredients:
2 egg whites, beaten until foamy
3 cups powdered sugar
1 – 2 T tsp water
1⁄4 tsp cream of tartar (optional)

Directions:
Sift powdered sugar and cream of tartar into a large bowl. Mix in beaten eggs, and whip for 5
min until stiff. Add water until desired consistency is reached. Color icing accordingly (white,
pink, red, blue, and black icing is needed for Emoji macarons) with gel food coloring. Load into
pastry bag, preferably fitted with small round icing tip.

Alternate Royal Icing (no raw egg whites)
3 T meringue powder
4 cups powdered sugar
4 -5 T warm water

Directions:
Beat all ingredients for 7-10 minutes until stiff, and add water until desired consistency is
reached. Color icing accordingly (white, pink, red, blue, and black icing is needed for Emoji
macarons) with gel food coloring. Load into pastry bag, preferably fitted with small round icing
tip.
