Southern Style Fried Squash

This video was shot in February. I was using off season squash. The best time to make is when the fresh local squash is in season during the summer, as the flavor is better, but this was still yummy! I love to serve with Dixie peas (butter beans) and creamed corn or potatoes along with a slice of fresh out of the oven cornbread! I know one thing, fried squash is some GOOD eatin'! :D

6-7 Yellow crook necked squash washed and sliced
2 eggs
1 cup buttermilk
3/4 cup all purpose flour
3/4 cup yellow cornmeal (I am using actual corn MEAL and not a MIX)
1 teaspoon salt
3/4 teaspoon black pepper (adjusted up or down to your taste)
1 teaspoon sugar (optional)
Cooking oil (I used canola or sunflower) Use whatever oil you would use for french fries.

Wash and slice squash. Set aside. Mix dry ingredients together. Mix eggs and buttermilk together. Pie plates are great dredging stations, though I did not use in this video, I normally do. Some folks use a ziplok bag but I prefer the old pie plates. Dredge as shown. Fry as shown. Eat while hot! Enjoy!
