Baking Portuguese Sweet Bread With My Mom

Welcome to this special Thanksgiving week episode in which my mom and I bake her famous bread together! I have been making this bread myself for a few years now following my mom’s recipe, but we have never made it together. It turns out we make a good team, as the bread came out better than it ever has for either of us. I hope you enjoy this episode! Arden’s Portuguese Sweet Bread

Makes 2 loaves

Ingredients
2 Tablespoons active dry yeast
1/4 Cup warm, not hot water (105-115 degrees)
1 Cup lukewarm milk
3/4 Cup sugar
1 Teaspoon salt
3 Eggs, room temperature
1/2 Cup butter, softened
5 1/2- 6 Cups bread flour (all purpose will work almost as well)
1 egg yolk + a splash of milk for egg wash
Sesame seeds

Directions
Dissolve yeast in bowl of stand mixer with 1/4 cup of the sugar. After the yeast blooms and bubbles add in the remaining 1/2 cup of sugar, salt, eggs, and butter until combined. Next add in the flour cup by cup until dough forms a ball and no longer sticks to the sides of the bowl. Knead in stand mixer for 3-5 minutes, until smooth and elastic. Let dough rise, covered in a warm spot for 1.5-2 hours until doubled. Punch down dough, divide into 6 equal pieces. Roll the pieces into long strands as long as your baking pan. Braid two loaves out of 3 strands each. Let loaves rise on greased baking pans until doubled, roughly 1 hour. Preheat oven to 350 degrees. Make an egg wash out of one egg yolk and a splash of milk. He rly brush over both loaves and sprinkle generously with sesame seeds. Bake until loves are golden brown, covering the loaves with aluminum foil if necessary to keep from over-browing, 35-45 minutes.

Chris’s special tips:
1. a good way to check the bread is to take the internal temperature and make sure it is at 200°. That actually is extremely helpful so you don't get gooey bread in the middle.

2. In gas stoves I have found the bread does better if I do a tin foil tent over the bread for the first 20 minutes of the bake.
