Rice and Beans Three Ways | Vegetarian Meals I Cooked My Family This Week
It’s rice and beans week!! This week you can follow along as I cook up three different rice and bean based entrees for my vegetarian family. It might sound boring, but all three dishes had very different flavors. Rice and beans are a great way to eat on a budget, use up produce, and eat yummy food!

Tuesday: Kidney bean masala — One Pan, Two Plates: Vegetarian Suppers: More than 70 Weeknight Meals for Two (Cookbook for Vegetarian Dinners, Gifts for Vegans, Vegetarian Cooking) https://www.amazon.com/dp/1452145830/ref=cm_sw_r_cp_api_i_w7ALFb8Q8YW4Y
Thursday:
Pan fried chickpeas with quinoa and veggies
Ingredients (4ish servings)
Coconut oil
2 cans chickpeas, rinsed and drained
1 t. Each ground ginger and powdered garlic
Any vegetables (I use onion, bell pepper, and kale)
Feta cheese and lemon for toppings
Dry chickpeas thoroughly, in a salad spinner if available. Heat coconut oil in large sauté pan. Add chickpeas, stirring until all browned, about 10-15 minutes. Pour into bowl, season with salt, garlic powder and ginger. Add more oil to pan, sauté veggies, seasoning with salt to taste. Cook quinoa to package directions, subbing out veggie broth for water if desired. Layer quinoa, chickpeas, and veggies into a bowl, and top with feta cheese and a spray of fresh lemon.
Note: this recipe is so versatile. Use whatever is in your fridge! I love seasoning the chickpeas with paprika (smoked or not) and cumin. Broccolini sautés up quickly and would add a nice dee green to this dish. Skip the feta and top with a dollop of hummus or whole milk Greek yogurt instead. Add a sprinkle of parsley. Experiment and see what works!
