😋 Split-pea Coconut Pudding

One of my (or many Asian's) favorite desserts: Split-pea coconut pudding 😋 (椰汁馬豆糕)!
All you need is just:

😋Ingredients:
Split-pea: 1/2 cup
Corn starch: 1 cup
Sugar: 1/2 cup
Coconut milk: 2/3 cup
Condensed milk/Evaporated milk: 1/2 cup
Water

👩‍🍳Directions:
1. Boil the split-pea until soft but not mushy. It may take about 20-30 mins
Drain well.
2. 1 cup of corn starch + 1 cup of water. Mix well.
3. Bring the following to boil over high heat: 1/2 cup sugar + 3 cups of Water + condensed/(evaporated milk) + coconut milk
4. After a full boil, turn to low heat, then add the corn starch water. keep stirring as the mixture thicken up
5. Pour in the cooked split-pea, Keep stirring at low heat...…...
6. Ready to put the mixture into your container. (Wet your container first if you want to flip your pudding upside-down)
7. Let it cool before putting it into the fridge
8. Ready to serve when it's thickened up!
💡 Cooking hints for a quick success:
a. Make sure the split pea is fully boiled until soft for a better texture.
b. Quite a lot of stirring at low heat to keep the mixture soft while getting all the ingredients to melt together.
c. Best to wet the container of your pudding before pouring in your mixture, this will make your flip easier to get an upside-down pudding)
