Lebanese Lentil Soup (Brown lentils)

Are you ready to make some healthy and flavourful lentil soup? I love this recipe, it is SO easy and makes a large portion so you can definitely have enough for lunch the next day. Let me know what you think!

To cook your dried lentils:
Dried lentils double in size when they are cooked so if you want to cook an exact amount for this recipe, use 1 cup of dried lentils. Rinse them thoroughly, then put them in a pot, covered with cold water. This would be about 3 cups of water. Bring to a boil and let it boil for 2-3 minutes then lower heat and simmer for 30 minutes or until tender.

Ingredients:
1 onion
4 cloves garlic
2 carrots chopped
2 potatoes diced
half a bunch of swiss chard chopped
2 cups of cooked lentils
1 tsp cumin
1/2 tsp salt
1/4 tsp black pepper (to taste)
3 cups of chicken broth
1 cup of water (if using canned lentils, use 2-3 cups of water)
1 1/2 cups of reseved liquid from boiling the lentils
Handful of fresh cilantro/coriander chopped
1/4 cup of lemon juice
