How to make Lemoncello with this simple recipe/should I use regular or organic lemons

Sipping on ice cold homemade lemoncello outside on a warm summer day is a great experience. I’m going to show you how simple it is to make delicious lemoncello at home.
FYI, USDA regulates that all organic produce have a product code sticker on it with a 5 digit code starting with a 9.
Ingredients:
3 1/3 cups Everclear alcohol 190 proof
Peel of 6-7 lemons 3 ounces lemon peel preferably fresh-picked or organic (85 grams)
3 cups sugar (625 grams)
3 1/3 water (750 ml)

Directions:
1- Rinse lemons well and dry. Use a peeler to remove the rind. You don’t want any of the white part of the peel.
2- Place the lemon peels in an airtight glass jar the add alcohol. Swirl peels and alcohol together.
3- Store the jar in a cool dark place.
4- Let it sit for 7 days.
5- In a pot mix water and sugar and bring to a boil. Once the sugar has melted remove it from heat and let it cool completely.
6- Strain peels from alcohol. Stir alcohol and the sugar syrup together.
7- Use a funnel to pour your lemoncello into a bottle and store in the freezer until you’re ready to enjoy.
