Sweet Spot Cornbread Cookies
Imagine having a shortcut to an extraordinarily different kind of cookie? We set out to use our Sweet Spot Skillet Cornbread Mix in an all new way, and the result is a super easy, super tasty cornbread cookie. We’ve been known to sandwich these sweeties with buttercream, frosting, or even a little jam. Get creative, have fun, and take it easy with a 1-2-3 recipe for yum.
Ingredients
1 package of Sweet Spot Skillet Cornbread Mix (not prepared)
6 tablespoons butter, softened
2 tablespoons light brown sugar
2 teaspoons vanilla extract
1 egg
1 egg yolk
½ teaspoon cinnamon
Directions
Preheat oven to 375 degrees. In the bowl of a stand mixer, cream the butter and brown sugar together, for about 2 minutes. Add vanilla extract and eggs and mix until combined. Then, add the cinnamon and the Sweet Spot Skillet Cornbread Mix; mix until a dough ball forms in the bowl.
Using a tablespoon, scoop dough and roll in your hands to form a ball. Place dough balls 2 inches apart on the baking sheet and bake for 11 to 13 minutes.
Remove from the oven and place cookies on cooling racks.
