INGREDIENTS
Ribs:
-2 racks of baby back ribs
-1/4 cup of Duce’s Wild Original Rub
Wrap Mixture:
-1/4 cup soy sauce
-1/2 cup brown sugar
-1/4 cup honey
-1/4 cup rice vinegar
-2 tablespoons sesame oil
-2-inch piece of ginger, grated
Glaze:
-1/2 cup hoisin sauce
-1/2 cup Duce’s DQ Glaze
-2 tablespoons soy sauce
-1 tablespoon Sriracha (or to taste)
-Liquid from the wrap mixture after cooking
Garnish:
-Toasted sesame seeds
-Sliced green onions
METHOD
Prep Ribs:
Remove the membrane from the back of the ribs, apply Duce’s Wild Original Rub.
Smoke Ribs:
Preheat your smoker to 250°F and smoke ribs for 2.5 hours.
Wrap Ribs:
Combine wrap ingredients, pour over ribs, wrap in foil, and return to smoker for 1 hour.
Prepare Glaze:
Mix hoisin, DQ Glaze, soy sauce, Sriracha, and liquid from wrap, simmer until thickened.
Glaze and Finish Cooking:
Glaze ribs, return to smoker for 10 minutes to set glaze.
Rest and Serve
Let ribs rest, slice, garnish with sesame seeds and green onions.
