Hotcake Mix Souffle Pancake | 2 Pancakes Recipe
Points: 1. use very cold egg whites ( put egg whites in the freezer for 4~5 min before beating )
2. do not overmix
3. cook it right away

1 egg yolk
1 & 1/2 tbsp milk
1/4 tsp vanilla extract
4 tbsp hotcake mix / pancake mix
2 egg whites
1 & 1/2 tbsp white sugar
1/2 tsp lemon juice ( with or without )

Topping / Garnish
vanilla ice cream
confectioners sugar
strawberry
maple syrup
whipped cream
spearmint
