RECIPES

SMOKEY BEANS ON TOAST & CHIA SEED PUDDING (SERVES 1)

Beans on toast

½ onion, chopped
1 garlic clove, chopped
200g mixed beans
x2 slices wholemeal toast
50g Tomato puree
½ tsp paprika (or smoked paprika)

Chia pudding

20g chia seeds
125ml Almond milk
50g frozen mixed fruits/summer fruits
1 tbsp desiccated coconut

Method
Put the chia seeds and almond milk into a jar or cup, mix together well and place in the fridge. Place your onions and garlic in a frying pan and fry off for 5 minutes or until cooked through. Add your beans to a pan and cook until hot, then add the tomato puree and paprika (add extra water if needed). Toast your bread and serve.
CHICKPEA MASALA (SERVES 1)

200g chickpeas
200g chopped tomatoes
½ an onion, chopped
1 clove garlic, chopped
½ tsp turmeric
½ tsp cumin
160g white rice
150g lentils
Coriander or rocket, to garnish
½ avocado
1 tbsp flax seed
½ tsp sea vegetables

Method

Put the garlic, onion, cumin, garam masala and turmeric into a pan and fry off. Next, add your chopped tomatoes and flax seed to thicken. Then add in your chickpeas and lentils. Cook for around 20 minutes. While the chickpea masala is cooking, boil your rice.
Once cooked, add your rice and masala to a plate. Add your avocado and garnish with your coriander or rocket.
LOADED SWEET POTATO (SERVES 1)

2 small or medium sweet potatoes
200g black beans
100g sweet corn
½ red onion, chopped
2 tbsp tahini
Large handful, curly kale
½ avocado
7-10 olives
Drizzle of sriracha sauce

Method

Put your sweet potato in the oven and cook for 30-40minutes. With 15 minutes remaining on your cooking time, put your sweetcorn and black beans in a pan and boil until
heated through. Add the kale to the pan and cook until wilted. Once your potatoes are cooked, remove from the oven and plate up. Drain your bean mixture and add on top of the
potatoes along with the onions, olives and avocado.Finally drizzle your tahini and sriracha sauce.
