Another GREAT "First Thing To Cook" in the Big Green Egg - 2-2-1 - Big Green Egg Pork Ribs

Today we continue with our third suggestion for the age old question, What should I cook first in my new Big Green Egg. We have covered pulled pork and whole chicken, now we move on to a rack of pork ribs. The normal 3-2-1 method of smoked ribs has been updated for smaller racks such as these St Louis style ribs to the 2-2-1 method. This is a great way to ensure that you get good consistent ribs every time. If you like fall off the bone ribs, cook them a little longer but the way we cover it n this video, your ribs will have that perfect bite through texture,
