🍋ULTIMATE LEMON CHEESECAKE🍋
✅For the Crust:
150 grams digestive biscuits, crushed
65 grams melted butter
✅For the Cheesecake Filling:
150 grams caster sugar
Zest of 1 large lemon
300 grams cream cheese, room temperature
2 teaspoons vanilla extract
50 grams whipping cream, room temperature

1 egg, room temperature
100 grams lemon curd for topping on the cheesecake
✅Notes:
1. Preheat the oven to 180 Celsius / 350 Degrees Fahrenheit.
2. Bake the Crust at 180 C / 350 F for 10 minutes
3. Once the crust is baked, take it out of the oven and lower the oven temperature to 140 Celsius / 284 Fahrenheit to bake the cheesecake
4. Bake the cheesecake at 140 C / 284 F for 35-40 minutes until the sides look set but centre is still jiggly
5. Place a bowl of hot water next to the cheesecake so the steam helps bake the cheesecake evenly
6. Leave the cheesecake in the oven after it has baked to help it gradually come down to room temperature. If you directly take it out of the oven, it will experience a temperature shock causing the cheesecake to crack all over the top.
7. After it finishes baking, crack the oven door open with the help of a wooden spoon so it’s slightly ajar. And let it sit in the turned off oven for about 1 hour.
8. After 1 hour, take it out and slather lemon curd on the surface and let it sit till it cools to room temperature.
9. Then refrigerate overnight and slice the next day.
10. Ensure you’re cleaning the knife with a damp cloth between each cut to get clean cuts of the lemon cheesecake.
