For all recipes, pre-cook the soba noodles
Soba Noodle Salad Recipe:
Dressing:

1 tsp grated ginger
1 clove minced garlic
1 tbsp miso paste
1 tbsp soy sauce
1 tbsp honey
2 tsp sesame oil
1 tbsp rice wine vinegar
1 tbsp water
Black pepper to taste
Mixmixmix

In a large salad bowl, mix
2 cooked bundles soba noodles
2 cups chopped napa cabbage
1 cup sliced snow peas
2-3 Shredded radishes
2 stalks green onions, chopped
1/4 cup chopped cilantro
Dressing

Toss it up
Serve, garnish with more radish for color

Soba Noodle Yakisoba
Sauce:
2 tbsp ketchup
1 tbsp sesame oil
1/4 cup Worcestershire sauce
1/4 cup soft sauce
Mixmixmix

In a wok, cooking on a gas burner
Add oil, let it get hot
1 sliced chicken breast
Season with some kosher salt
1 tbsp yakisoba sauce

Stir fry until the sauce evaporates

Add 2 cloves minced garlic
1 tsp minced ginger
Stir fry

Add 1/2 onion, chopped
1/2 Carrot thinly sliced

Continue frying

Add 2 cups chopped Napa cabbage
1 cup sliced purple cabbage
2 bundles soba
2 stalks green onions, diamond cut
Rest of yaki sauce

Stir fry until everything is well coated.
Serve, garnish with more green onions

Soba Noodle Soup:
1 bag Dash soup mix
Add 3 cups water
Boi 5 minutes, remove soup bag
Add 2 cups veggie broth
1 tbsp soy sauce
1 tbsp sake mirin
1/2 block diced tofu
1/2 carrot, sliced
1/4 cup snow peas,
Green onions
Boil 5 minutes until veggies become slightly soft

Serve over soba noodles with wakame seaweed and enoke mushrooms
