Cinnamon Rolls Recipe | Inspired by Cinnabon

We have been making these cinnamon rolls for years, following a classic American recipe for the beloved Cinnabon.

This time we tried it on individual molds too, following a baking suggestion from favorite London bakery and baking school 'Bread Ahead'. These came out more crispy on top and less chewy in the middle than the ones in the tray, perfect for those who prefer a more bread-like texture than the traditional Cinnabon.

INGREDIENTS (~12 rolls)
Dough
2 1/2 tsp active dry yeast or instant yeast
240ml milk lukewarm (36.5 to 40.5 Celsius)
100gr granulated sugar
75gr butter unsalted, softened
1 tsp salt
2 eggs
600gr all-purpose flour
Filling
225gr dark brown sugar
2.5 tbsp cinnamon
75gr butter unsalted, softened
Cream cheese icing (optional - not shown on the video)
50gr butter unsalted, softened
200gr powdered sugar
100gr cream cheese, room temperature
1/2 tsp vanilla extract
1/8 tsp salt

Instructions
For the rolls:
1. Dissolve the yeast in the warm milk with a tsp of sugar in a large bowl. Let it sit for about 5 minutes. It will start to froth up.
2. Mix in the sugar, butter, salt, eggs and mix well. Add the flour and mix until well incorporated.
3. Knead the dough using your hands dusted lightly with flour.
4. Place the dough into an oiled bowl, cover and let rise in a warm place about 1 hour or until the dough has doubled in size.

Filling:
1. Combine the dark brown sugar and cinnamon in a bowl.
2. Line a 23x33 cm baking dish with parchment paper.
3. Roll the dough out on a lightly floured surface. 
4. Spread the butter evenly over the dough, then sprinkle with the sugar evenly over the surface of the dough.
5. Working carefully, from the long edge, roll the dough down to the bottom edge.
6. Cut the dough into ~5cm slices, and place in the lined baking pan.
7. Cover with plastic wrap and let them rise for another 30-60 minutes, or until doubled in size.
8. Preheat oven to 170o C (fan) and bake on the low rack for 18-20' or until golden brown . Cooking time can vary greatly!
Icing:
1. Mix all the icing ingredients and beat well with an electric mixer until fluffy and smooth.
2. When the rolls are done, spread generously with icing.
