VEGAN SHEPHERD’S PIE | Cozy, Hearty & Wholesome Comfort Food 🥔🥕🌿
This Vegan Shepherd’s Pie is the ultimate plant-based comfort meal—rich, savory, and layered with goodness! A flavorful lentil and veggie filling is topped with creamy mashed potatoes and baked to golden perfection. Perfect for chilly nights or whenever you need something warm and satisfying!
📝 Ingredients:
For the filling:
2 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 cup mushrooms, chopped
1½ cups cooked green or brown lentils
2 tbsp tomato paste
1 tbsp soy sauce or tamari
1 tsp thyme
1 tsp rosemary
½ tsp paprika
1½ cups vegetable broth
Salt & pepper to taste
1 tbsp cornstarch mixed with 2 tbsp water (to thicken)
For the mashed potato topping:
4 medium potatoes, peeled and chopped
¼ cup plant-based milk
2 tbsp vegan butter
Salt to taste
👩🍳 How to Make It:
Boil the potatoes until tender. Drain and mash with plant milk, vegan butter, and salt. Set aside.
In a skillet, heat olive oil and sauté onion and garlic until soft.
Add carrots, celery, and mushrooms. Cook for 5–7 minutes until veggies soften.
Stir in lentils, tomato paste, soy sauce, herbs, paprika, and broth. Simmer for 10 minutes.
Add cornstarch slurry and cook until the mixture thickens.
Spread the filling in a baking dish. Top with mashed potatoes and smooth the surface.
Bake at 400°F (200°C) for 20–25 minutes or until the top is golden.
Let cool slightly before serving. Enjoy!
✨ Optional Add-ins: Green peas, corn, or chopped spinach for extra color and nutrition!
