Perfect Spaghetti Carbonara

WHO doesn't love a good pasta? Carbonara is the pasta of the people! It has all the flavor you want without all the sacrifice. It's chewy, salty, creamy, cheesy, yumminess all in one bowl.

Recipe:

16-17oz or 1 Package Spaghetti
8oz or 1 pack pancetta or high quality bacon
3 eggs + 1 yolk
1 cup Parmesan plus more for garnish
2 tsp fresh cracked pepper
2 cloves garlic smashed
2 tsp sea salt
2 heaping handfuls of kale chopped into strips
2 cups brussel sprouts quartered
coarse salt for seasoning veggies plus more for garnish
chili flakes for garnish
chopped parsley for garnish
extra cheese for serving

Method:

Rib and slice Kale reserving extra kale for other recipes. Trim and cut brussel sprouts into quarters. Slice bacon into 1/2" strips. Beat three eggs and mix in parmesan, refridgerate.
Fill a heavy stock pot with water and turn on medium high to boil. Set a cast-iron skillet on Med-High to warm. Once hot enough, add bacon. When fat is redered (or released into the pan) add garlic cloves and cook until bacon is crispy, bright golden and cooked through. Remove onto a paper towel lined plate. Add Brussel Sprouts directly to the pan with the rendered bacon fat for extra flavor. Let sprouts carmelize nicely by not disturbing them right away! Give them time to do their job. Once sprouts begin to turn golden, season with salt and pepper. When deep golden and charred in places, remove. Add kale and season with salt and pepper. Remove as soon as it begins to wilt. Turn off heat.

Once stock pot is boiling add two teaspoons of salt. Return to boil and add pasta. Stir immediately to prevent pasta from sticking. Cook until just al dente (about 7-10 min depending on the size and texture of your pasta) This means the pasta should not be crunchy but still very chewy! TRUST ME!
BEFORE DRAINING PASTA - IMPORTANT! RESERVE 1/2 CUP OF PASTA WATER. Drain pasta and return to the pot.
Remove cheese mixture from the fridge and thoroughly mix in one egg yolk. Pour cheese mixture into the pasta and mix rapidly to incorporate mixture through the pasta. Add water as necessary to create a silk, creamy, glossy texture. You will use about 1/4 cup of pasta water. **There should be no curdling of the eggs when doing this.**
*******Alternatively, if you are worried about eggs curdling, mix pasta into the cheese mixture by putting the pasta directly into the bowl the cheese mixture is in and mixing it in that bowl instead of the pot.
Add bacon (reserving about a tablespoon), sprouts, and kale and mix again.
Plate pasta in a large serving bowl and top with reserved bacon, chili flakes, pepper, and chopped parsley. Serve with coarse salt and extra Parmesan cheese.

Bonus Recipe - quick Mixed Greens Vinaigrette:

2 parts Vinegar (about 4TBS)
1 Part Extra Virgin Olive Oil (about 2TBS)
Pinch of oregano
Pinch of chili flakes
1-2 cloves smashed garlic
pepper
pinch of salt
1tsp dijon
1tsp honey
Optional - finely chopped shallots - (about 1-2 tsp)
Makes enough for one large salad
Whisk all liquids until emulsified, add shallots and lightly whisk again
